Cookering devices
We are getting a KitchenAid mixer as our family Christmas present, and there are a lot of models! Based on my research I am thinking the 5qt Artisan on accounta bread dough, but not every day, but am open to hearing other opinions.
Also, I am confused by the color choices!

Is the Artisan good for stiff dough like that or do I need to go with the way more expensive? I am thinking the Cinnamon color, because it would look good with my St. Cecilia granite I think.

I've just checked, mine is an Artisan. This week, I've kneaded a double batch of bread in it, and made toll house cookies in it.
You will see the head part rock a bit in the bowl when stirring heavy things with slow speed, but that's OK. I also use mine with attachments, for making sausage. Yes, it does a good job with that, too.

I am actually going to have my dad pinstripe it and monogram it for me. He does all of our things...our cars, bike helmets, luggage, Kindle cases, you name it, Dad has painted on it. He has been working on an old breadbox for me.
I think that lady's artwork is amazing though. If I was made of money I would get something airbrushed like that.

I am ing my mixer very much. I used it with baking mix even, and just pinched dumplings off the dough in the mixing bowl...no rolling mats or big lumps. I have also made bread SO EASY. Mix, rise, shape and bake.

I have such a fear/desire thing for stand mixers. They're so versatile and make so many things easy. I just can't get past my problem with large appliances living permanently on my counter. When I win the lottery, I'll get a kitchen with a whole dedicated appliance counter that doesn't make me feel oppressed or hemmed in by hard-to-move shit. And since I'll be rich, I'll hire Nicole Dinardo to airbrush the living shit out of every last one of them.

It looks quite lovely on my counter, but am going to have a cover made for it to keep the ickies out of its works. I need a place for its attachments though that isn't a drawer or cabinet. I think the old breadbox my dad is working on will be painted to match, and be a garage for those.

I talked my sister into making me a very simple drawstring bag for the attachments. I keep the bag inside the bowl of the mixer to help keep dust out. I still haven't gotten around to getting it a cover.

Our kitchen has so many drawers and cabinets it's ridiculous. We have a bank of three low, deep cabinets that are home to our crock pot and coffee maker, etc. it's the fucking best.

We just moved to a place with a bigger kitchen, and can keep all our special use appliances in cupboards instead of hogging up counter space, which we have more of anyway... It is the best.

EMERGENCY
I need a smallish carbon steel frying pan, and I do not want some $70 DeBuyer thing.
Does anyone have cheap carbon steel cookware? I'm looking at Paderno, but am nervous because I can't tell how the handles are attached. What if they're just glued on or something?
And what is the practical difference between black and carbon steel pots and pans? I can find explanations of why they're different, but nothing about the benefits and downsides of one vs. the other.

Well, go find out and then tell me what to do! This is an emergency!
I just need a small, lightweight, non-stick fry pan, but not the coated kind.
I'm 90% decided on the black steel Paderno pan, because it is the right size and shape and it's about $20 depending on size, but I thought I'd just check and see if anyone has some better idea first. I really don't like having to replace things, so I want to get something that's not going to fall apart, like, ever.

Hard anodized aluminum? The most durable I am told. I love my cast aluminum calderas, once seasoned they are as non stick as my well seasoned cast iron, but so much lighter weight.

They're sort of like cast iron cookware, in that you build up a season in them with fats and oils that makes them non-stick, and you just wipe or scrub them out and then run them under hot water instead of regular washing. It's just that the carbon steel ones are lighter than cast iron. It's basically just a replacement for this old non-stick fry pan that I hate and have had forever and just really want to throw away.
I don't know if you said it or I just assumed it, but I had the impression that you were not a fan of cookware you can't use soaps or detergents on.
Which is all to say that I figure you probably don't know about them because you don't want to. They're for filthy animals only.
