He was playing the straight man in that though. Anyway the contestants are what made Celebrity Jeopardy funny.

His ability to keep a straight face despite everything going on around him is a rare gift. When "Sharon Osborne" put her puppy up in his face and all he did was glare at her, I thought I would die. And in the Blue Oyster Cult sketch, he and Walken were the only two not running out of frame to crack up every five seconds.

Zoolander he was in a supporting role and he was decent. Anchorman I liked. Blades of Glory was amusing but not great. Elf was good. Old School was so-so. I liked him best as Janet Reno on SNL, and later on as George W. Bush.
I've said it elsewhere, but I think the problem is more involving the overuse of the man-child trope in the movie industry. Jack Black, Jim Carey, Adam Sandler, and Will Ferrell starred in a lot of these roles and it needs a rest. The problem is some of their early man-child movies were solid money-makers, so then formulaic scripts began to be pumped out and these guys were happy to jump on and make money along with Hollywood. If more of these movies lose money then the message will be heard. The problem with that of course, is most of these movies do make money, especially movies like Anchorman (which again, I mostly liked, though I wouldn't see it again) that don't have a special-effects budget or a lot of costs to kill profitability. This is why the Wayans brothers make a lot of money (though arguably some of their films are great while others not so much). The other problem is movies are often a couple years behind the audience's interests; two years is about the minimum time from script to theater.

Hansel and Gretel: Witch Hunters, Neighborhood Watch, The B Team, King Dork, Untitled Sherlock Holmes Project, Anchorman 2, and 2-Face.

Will Ferrel is one of those comedians I like in small doses. Like the cowbell sketch on SNL and the Internet video he made where his toddler daughter plays his landlady.
Full length movies? Nope, not happening.

I saw Stranger than Fiction for Emma Thompson and Latifah, and I loved it.
I still love SNL Jeopardy, though.

I can see Dumb and Dumber as falling into that category of man-child roles, but I'm not really seeing how Jim Carrey fits that description for basically any of his other major movies.
I like Jim Carrey, and he's a better actor than the others you mentioned.
Anyway, with regards to Will Farrell, I liked Anchorman and Talladega Nights. Blades of Glory was ok. Elf was cute. Old School was dumb.
I actually didn't like Stranger Than Fiction that much.
Haven't seen the others, they mostly looked stupid.
