I like to buy loose assam tea and add my own chai ingredients. I occasionally make the traditional stuff with cardamom pods and cloves. My current favorite is assam with bits of guajillo and arbol chilies, dark chocolate (the 90% cacao stuff), and cinnamon.
Reminds me. I need to make up a batch of loose chai to take to work next week!

Now that you mention it, I have green tea with cherry sitting in my cupboard forgotten. I need to get on that. I also buy some Michigan cherry tea from Cherry Republic that is flavored black tea and makes great iced tea. Seriously, I will happily devour pretty much any cherry or cherry flavored thing that isn't cough syrup. I'm a Michigan girl, through and through.

Oh my god, y'all. OH MY GOD.
I have a new favoritest tea. It is so unbelievably good.
It is called Lemon Velvet. It is a rooibos red tea blended with lemon grass and marigold. It tastes exactly like a lemon velvet cake. It is even, I dunno how to describe it... substantial tasting. Like a mouthful of rich, sweet, slightly tart cake in liquid form.
I brew it in my french press really strong, then add water until it is the perfect strength. Super fantastically good iced. I don't even.

I am sorry for your lots. But not really, we all have different palates.
I am a devout and passionate lemon lover. Even when faced with the choice of chocolate or lemon I always go for lemon. This tea isn't freakishly lemony, it is quite subtle and yet rich.

I first had it at a fancy coffee and tea shop, but their prices were crazy, like a million dollars an ounce.
I finally found it at Central Market in their bulk tea section. I have been frequenting that aisle a lot this summer. I used to be scared of the giant canisters with like $20-40 a lb written on them until I realized one doesn't buy tea by the pound. I have been p surprised at how affordable those little baggies of joy are when you portion them out. Some as low as 80 cents and the most I have spent is $3 for a particularly dense tea.
You can also find it online, sterling tea sells it, though I haven't used them before.

I made iced tea yesterday with my Japanese Wild Cherry tea. That's the one I said I needed to get drinking up thread. I used the baking soda trick and sweetened it with honey. I thought it was a little bland at first so I sliced up two peaches, minus bad spots, and froze them. Then I tossed them in like ice cubes. They had all thawed and sunk to the bottom by the time I drank it and I didn't find it bland at all. Don't know if that's down to the peaches or if I was just wrong the first time. I almost never make iced tea, but this is yummy enough to make me consider doing it more often.

Well, roast...I put about five to six bags of PG Tips in a quart glass jug with cold water and set the jug, covered, in the sun. Over a couple of hours the tea infuses the water. I fish out the tea bags and pour the tea result from the jug over ice in glasses.

We had some, let's say interesting, patrons for a while who would go to the genealogy department where they are out of sight of the librarians and eat full meals out of carry-out containers. Once we caught them making sun tea back there. The seemed to only come in for that one summer. We're all rather glad they moved on.

I made some very simple glazed vanilla cookies the other day. At first I thought they were bland and pointless with an odd almost caffeiny aftertaste courtesy of the fucktons of fresh vanilla bean I'd added to cookie and glaze both. Once they were fully cooled and the glaze hardened, however, they miraculously transformed into something delicate and lovely with a soft crumbly texture not unlike shortbread.
I had them with peach tea the past couple of mornings and it's such an ideal pairing I'm posting about them here instead of in the Stupid Baking thread. Dunking is against my religion, but I suspect they'd be outstanding dunking cookies. As it is, a sip of tea with a nibble of cookie go together like a horse and carriage.
I'm sure they'd be dreamy with non-herbal tea as well, an English breakfast tea, for example, with a spot of milk wot wot.
Glazed Vanilla Bean Cookies
Cookies
2/3 cup granulated vanilla sugar
1 cup unsalted butter at room temperature
1 egg
2 scraped vanilla beans, seeds only (put the empty pods back into your vanilla sugar)
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
Glaze
1 cup powdered sugar
2 tablespoons milk
2 scraped vanilla beans, seeds only
Preheat the oven to 350 .
In a large bowl with a hand mixer, beat together the butter and vanilla sugar for about three minutes until fluffy. Add the egg and vanilla seeds and beat until smooth. I used a hand beater but of course you fancy Kicken Aid types can use the paddle attachment of your stand mixer.
In a medium bowl, sift together the flour, baking powder, and salt. Add the flour mixture to the butter mixture in batches and beat until the dough comes together and is one smooth texture.
Scoop 1-2 tablespoons (I used a 1.5 tablespoon cookie scoop) of the dough and roll them in your hands gently to form a ball. Place on the cookie sheet and flatten slightly.
Bake for about 15 minutes (my oven is cool so I baked them for 20) until the cookies just begin to turn golden around the edges. Remove from the oven and let sit for about two minutes, then move them to a wire rack and let cool completely.
Repeat with all the dough. I got exactly 28 cookies out of them, so three batches of 12, 12 and 4.
Once the cookies are fully cooled, make the glaze. In a small bowl, whisk together the powdered sugar, milk, vanilla until smooth. Dip the top of each cookie into the glaze and give them a gentle roll so the sloping sides get some love too. Put a bunch of paper towels under the rack, then place the glazed cookies back on it. This will save you the giant pain in the ass of removing gobs of hardened glaze from your countertop.
The glaze will set in about 15-20 minutes. I let them sit for a full hour because I'm crazy and stupid before putting them in my cookie tin. Brew up some tea, raise your pinky and go to town.
