Green chili with rice, beans, and tortillas.
Yesterday, I got two bushels of Moscos (one hot, one extra hot, mixed up and roasted together), then peeled and put them up, so this is our first green chili of the season.
It's a million fucking degrees outside, but I couldn't wait.

I made a sufferin' succotash pie.
I stir fried a mixture of sweet corn with lima beans, kidney beans, haricot beans, diced potato, and chopped onions. Then I put it in a casserole dish with some gravy stock, added a pastry top and baked it in the oven till the crust was golden.
Not really a "pie" by my definition as the pastry didn't go underneath and around the filling - I was worried that it would get too soggy from the filling.
Anyway, it was delicious. I may try try pre-baking an empty "pie" next time, then adding the filling and putting a pre-baked top over it with a little milk or similar around the edges to act as glue - then putting it back in the oven for a few minutes to weld the top onto the pie.

Red oil of Death.
First pull extract of 1oz chili pepper flakes. Yes I've tested it, and yes it burns.

Last night for friends dinner, I made falafel and imam bayildi (stuffed roasted eggplant) with rice and tzatziki, which is probably more work than I needed to do (especially since I also had to make the yogurt--what was I thinking?) So Matlock had to step in and cook a bunch of the falafel for me because I was so tired.
But I just had some of the leftovers for lunch, and we really nailed it. Just probably no more making all those things at the same time again.

Tonight, we are having frozen pizza, which I cooked in the oven which I point out because JoeP reads this thread sometimes.
But LAST NIGHT, I had a powerful craving for saag paneer, so I for the first time ever made some, and it was really good, especially for a first try. It took like two hours because I had to make the cheese, and because it always takes about three times the effort when you're making something the first time, but I am pretty happy that I now know I can make me some spicy saag paneer, just the way I like it, whenever I want. I've got a couple very minor adjustments I plan to do next time, but I know how to do it now!
There aren't a whole lot of things going right these days, but I learned how to make saag paneer.

Probably Chinese food tonight, assuming the place I'm planning to order from is open and didn't just forget to update their site. I was going to get Middle Eastern, but they're apparently all closed today, either for Christmas Eve or just for Sunday. BOOOO!
Tomorrow,spaghetti and meatballs was getting a little tired, so I'm doing lasagna. Not even copying Zehava.
And my bestie is making tamales, so maybe we'll swap our leftovers day after. We are both extremely fortunate to have grown up in families that didn't really have many Christmas traditions, so we just gank whatever ones we feel like.

Tofu Veggie Stew!
I haven't quite got the spice mix down right but one of the keys with the tofu is to boil it in the broth, then fry the crap out of it before adding it back in. A good chunk of ingredients are just trying to recreate the hearty meaty like flavor, but it's come out pretty well.

I cut the WHOLE ENTIRE OTHER LASAGNA in half and froze it.
PS, though: Ricotta is even easier to make than paneer. We never have to buy fresh cheeses again.

Calzones!
We used Chef John's pizza dough recipe which makes enough dough for 4 calzones. Then we followed the method on his But not the ingredients. We just made a 4 cheese calzone with mozzarella, edam, cheddar and goats cheese. We also made a simple pizza sauce that we put in the calzone as well as used as a dipping sauce.
They were ludicrously good.

Shakshuka with feta and sausage (sausage is off-camera) and ciabatta on the side. I used chorizo because that was what I had available but it would've probably been better with some lamb merguez.
You will be shocked to learn that the comments on the recipe are not about whether the dish is good, but instead are all people arguing about whether the dish is Israeli or Palestinian (the recipe describes it as popular in Israel). Of course, the recipe page also says that it originates in North Africa, which is probably correct from what I can tell. Which is part of the reason I thought of merguez sausage... Either way, I imagine most Israelis and Palestinians would not serve it with pork sausage.

I've also made Shakshuka a couple of times lately and even this chorizo this last time...
Over done the eggs both times so I missed out on the nice runny yolks but still tasty.

It is sausage making time this weekend. One of my cousins wanted to learn how to make sausage so I'm packing up all my gear and we will make a day of it.
Making two types of sausage:
Old standby and favorite: Chicken Basil (forewarned these are links to PDFs)
And Beef and Garlic (first try with this recipe)
Planning on 2 batches of each or roughly 20 pounds of sausage, which is a lot of work.

Sausages turned out good.
Grilled up some for dinner that day and vacuum packed the rest. We had to par-boil them for a few minutes before putting them in the vacu-seal. If we hadn't done that I'm pretty sure they would have exploded.
Chicken sausages were a little salty. I didn't bring my kosher salt and we had to use table salt and I forgot to cut down on the salt doing that.
Beef sausages had a good taste, though I little dry. Next time I'll cut down on the meat some and add some extra fat plus add some water to the mix so it is more pasty. Being more pasty it will come out of the stuffing device more consistently.
