Default So.......rice

I have discovered something.

There is nothing wrong with my Krups Rice Cooker.



Previously I had tried to make rice in it,:rice: and the rice would always come out crunchy and a little hard. Not chewy and fluffy like the local Toshi's Teriyaki or corner Asian take-out place.:takeout: I had to throw out several batches.

But I have discovered A New Trick That I Will Share With You.

Soak the rice for 10 minutes in water before cooking. Then don't open up the cooker when it's done. Let it sit for 15 minutes after the cooking is finished. The rice comes out soft and sticky, just like it should. And it's still soft and sticky five hours later, on Keep Warm mode.

I soak and rinse my rice (and barley) ahead of time too, because it gets rid of any starch coating the grains and ensures it cooks cleanly instead of getting all frothy and overflowing. I did that even before I got a rice cooker 'cause a nice vegetarian caterer lady told me to.

Letting it rest after it cooks is another core principle of grain cookery. It allows the moisture to distribute evenly so the bottom and top layers of the rice have the same consistency.
