slim, do you and Sou dehydrate fresh herbs? If so, do you always strip the leaves or can you dehydrate any of them on the branch?

We have such a prolific herb garden here (no real winter so grows year round) that we have never dried herbs, we just pick'em when we need'em. Sorry.

Have you made any jerky yet? Mmmmmmm jerky.

So a couple of summers ago we grew a crap load of chilli plants. I think we had about 20 of them and they all did quite well. We had two large zip-lock bags full of them in our freezer. Since we're moving soon :crossfingers: we have been trying to eat down the freezer. We decided to dehydrate all the chillies and then grind them down to powder.

Here is one tray of the dried chillies:

And here is some of the powder, it has a gorgeous colour:

And finally our jar of chilli powder, extra, extra hot:

These chillies are birds eye chillies and are about 2-3 times as hot as cayenne peppers. I'd usually use about 5 for a dinner and that would be quite hot for your average person. Well we ground up about 500 of them and it didn't make that much powder, so it's super hot. It actually has a nice almost smokey flavour to it as well, really mild but quite nice. I'm not sure if that is just from the dehydrator or because I did a load of jerky in there at the same time :chin:

Anyway, home made chilli powder! :cheer:
