Roasted Red Pepper and Tomato soup.

It's untried recipe time again! This is the soup that made me love eating soups again. As nice as the one I buy at the store is, it's expensive. Plus my uncle gave me a ton of red peppers, and they need to be used. So I'm going to try this recipe.

¼ hours 20 min prep

2 sweet red peppers
6 cups tomatoes, chopped (2 - 28 oz. cans, undrained)
2 tablespoons vegetable stock base
2 tablespoons sugar
salt
white pepper
1/4 cup 35% cream
4 tablespoons butter
1 sprig fresh basil (for garnish)


1. Grill the peppers, turning frequently, until bla ckened all over.
2. Peel off the skin.
3. Gently wipe or scrape off any remaining black stuff from the outside. Cut open and discard seeds and white insides.
4. Do not wash as this will flush away much of the flavour.
5. Puree peppers and tomatoes in a blender or food processor.
6. Strain out seeds.
7. Place pepper/tomato mixture in a saucepan.
8. Bring to a boil, then simmer uncovered for about 25 minutes.
9. Add remaining ingredients except butter and basil.
10. Simmer uncovered for 15 - 20 minutes.
11. Remove from heat. Set pan in ice water and gradually whisk in butter.
12. Cool, cover and refrigerate overnight. Next day, heat gently, garnish with basil and serve. Note: This soup is quite mild.

I'm thinking of adding paprika, garlic, and thyme as well. This will probably be dinner tomorrow night.

    That looks delicious. I second the spice additions.

    Incidentally, you know roasted red peppers make an outstanding pasta sauce. All you have to do is cut the peppers in half lengthwise, rest them cut side down on a baking sheet, broil them for 5-8 minutes until the skin is black. Then put 'em in a paper bag to steam for 15 minutes and the skin will come right off.

    Once they're peeled, you chop them up superfine, sautee them with garlic for a while, then mix in with pasta and a little reserved cooking water. Top with fresh chopped or julienned basil and parm for ultradeliciousness.

    It was quite good. I'll have to try it again, the flavors seemed a bit..out somehow.

    Liv, thanks for the pasta sauce recipe, I've got the rest of the roasted red peppers in the fridge awaiting pasta night.
