Roasted Red Pepper and Tomato soup.

It's untried recipe time again! This is the soup that made me love eating soups again. As nice as the one I buy at the store is, it's expensive. Plus my uncle gave me a ton of red peppers, and they need to be used. So I'm going to try this recipe.
I'm thinking of adding paprika, garlic, and thyme as well. This will probably be dinner tomorrow night.

That looks delicious. I second the spice additions.
Incidentally, you know roasted red peppers make an outstanding pasta sauce. All you have to do is cut the peppers in half lengthwise, rest them cut side down on a baking sheet, broil them for 5-8 minutes until the skin is black. Then put 'em in a paper bag to steam for 15 minutes and the skin will come right off.
Once they're peeled, you chop them up superfine, sautee them with garlic for a while, then mix in with pasta and a little reserved cooking water. Top with fresh chopped or julienned basil and parm for ultradeliciousness.Posted 10-02-2007 at 02:39 PM by livius drusus
