They do. On a stovetop cooker, the pressure valve does double duty as the thermostat -- heavier weights mean higher pressures mean higher temperatures. And if that gets plugged or stuck for whatever reason, rising pressure will eject the rubber plug and decorate your kitchen festively. An electric one can sense overtemperature and shut itself off instead.
